Beef Tacos al Pastor inspired
A modern take on tacos al pastor using beef in a smoky, pineapple‑bright marinade, served on warm corn tortillas with fresh salsa and onion‑cilantro topping.

Thinly sliced beef marinated in a sweet-savory soy, pear, garlic, and sesame sauce, then quickly seared for classic Korean BBQ flavor—no grill required.
Make the marinade: in a bowl, combine soy sauce, brown sugar, grated Asian pear, garlic, ginger (if using), sesame oil, gochujang (if using), and black pepper until the sugar dissolves.
Add sliced beef to the marinade and mix thoroughly to coat. Cover and refrigerate for at least 30 minutes (or up to 12 hours).
Heat a large skillet or wok over high heat. Add neutral oil, then add onion and the white/light-green parts of the scallions. Stir-fry until lightly softened and starting to brown at the edges.
Add the marinated beef (including some of the marinade) in a single layer. Sear, then stir-fry until the beef is cooked through and the sauce reduces to a glossy coating.
Turn off heat. Fold in the remaining scallion greens, then garnish with sesame seeds (if using). Serve hot with rice and lettuce leaves if desired.
