Orthodox Lenten Tomato Soup
A hearty, meat-free tomato soup inspired by Orthodox Lenten foods. Simple, comforting, and naturally dairy-free, it relies on vegetables, tomato, and pantry staples to achieve a bright, silky soup.

Light, fluffy vegan pancakes suitable for Lent, using simple pantry ingredients. Dairy-free and egg-free, with a subtle sweetness and a crisp edge.
Whisk dry ingredients (flour, sugar, baking powder, salt) together until uniform.
Stir vegan milk, oil, and vanilla (if using) in a separate bowl; pour into dry mix and whisk just until combined; small lumps are okay.
Let the batter rest briefly while heating a non-stick skillet over medium-low heat and lightly oiling the surface.
Pour 60 ml portions of batter onto the skillet; cook until bubbles appear on the surface and edges look set, then flip and cook until golden.
